Ingredients
- 3 tbsp olive oil
- 1/2 tsp sea salt
- 3/4 tsp ground black pepper
- 2 garlic cloves, smashed
- 2 sprigs fresh rosemary
- 6 cups baby arugula
- 4 New York strip steaks
- 2 tbsp freshly squeezed lemon juice
- 6 oz shaved Parmesan
- 4 oz balsamic vinegar
Directions
- Remove the steaks from the refrigerator 30 minutes before cooking. Pat them dry and season generously with salt and pepper on both sides.
- Heat 3 tablespoons of olive oil in a large cast-iron skillet over medium-high heat. Add the smashed garlic and rosemary sprigs to infuse the oil for about 30 seconds.
- Add the steaks and sear for 3-4 minutes per side for medium-rare, or longer to your preferred doneness. Transfer to a cutting board and let it rest for 5-7 minutes.
- In a large bowl, combine the arugula with lemon juice, a drizzle of olive oil, and a pinch of salt. Toss gently to coat.
- Slice the steaks thinly across the grain. Arrange the arugula on a platter or individual plates, top with steak slices, then generously sprinkle with shaved Parmesan. Finish with a drizzle of balsamic vinegar and serve.
