Ingredients

  • 3 tbsp olive oil
  • 1/2 tsp sea salt
  • 3/4 tsp ground black pepper
  • 2 garlic cloves, smashed
  • 2 sprigs fresh rosemary
  • 6 cups baby arugula
  • 4 New York strip steaks
  • 2 tbsp freshly squeezed lemon juice
  • 6 oz shaved Parmesan
  • 4 oz balsamic vinegar

Directions

  • Remove the steaks from the refrigerator 30 minutes before cooking. Pat them dry and season generously with salt and pepper on both sides.
  • Heat 3 tablespoons of olive oil in a large cast-iron skillet over medium-high heat. Add the smashed garlic and rosemary sprigs to infuse the oil for about 30 seconds.
  • Add the steaks and sear for 3-4 minutes per side for medium-rare, or longer to your preferred doneness. Transfer to a cutting board and let it rest for 5-7 minutes.
  • In a large bowl, combine the arugula with lemon juice, a drizzle of olive oil, and a pinch of salt. Toss gently to coat.
  • Slice the steaks thinly across the grain. Arrange the arugula on a platter or individual plates, top with steak slices, then generously sprinkle with shaved Parmesan. Finish with a drizzle of balsamic vinegar and serve.
