Ingredients
- 1 tbsp white sugar
- 1 tbsp garlic salt
- 1 tbsp kosher salt
- 1/2 tsp cayenne pepper
- 1 tbsp fennel seeds, crushed
- 4 lb baby back ribs
- 1/3 cup rice wine vinegar
- 1/3 cup brown sugar
- 1/3 cup orange juice
- 1 tbsp grated orange zest
- 2 tsp hot chili paste
Directions
- Preheat your oven to 275°F. Line a large baking sheet with aluminum foil.
- In a small bowl, combine the fennel seeds, black pepper, sugar, garlic salt, kosher salt, and cayenne pepper. The mixture will be used as the spice rub used in the next step.
- Place the ribs on the prepared baking sheet and cut shallow slits in the membranes along the back of the ribs. Rub the spice rub on both sides of the ribs, then place them in the preheated oven and bake for 1.5 hours. Flip and bake for an additional hour. After baking, remove the ribs from the oven and allow them to completely cool for about 45 minutes.
- In a large saucepan, add the brown sugar, orange juice, vinegar, orange zest, and hot chili paste. Bring to a boil using medium heat, then reduce the heat and simmer for about 5 minutes until the mixture has reduced by half.
- Preheat the oven to 425°F and line your baking sheet with foil again. Cut the rib racks into individual ribs and toss with the glaze in a large bowl until evenly coated. Reserve any additional glaze in the bowl for basting.
- Place the ribs on the baking sheet and bake in the oven for 5 minutes. Flip and brush them with the remaining glaze, then bake for another 5 minutes until browned. Serve warm.
