Ingredients
- 1 1/2 cups orecchiette pasta
- 2 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 14 oz chicken broth
- 4 pork sausage patties, chopped
- 12 oz roasted peppers
- 4 cups arugula
- 1/2 cup Parmesan cheese, grated
- 2 tsp fine sea salt
- 1 tsp ground black pepper
Directions
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic and sauté until they become fragrant and softened.
- Stir in the sausage and season with salt and black pepper. Cook until it becomes browned; break it up as it cooks. Pour in half of the chicken broth and let it simmer for a few minutes.
- Add the pasta and roasted peppers, allowing the broth to reduce by half. Pour in the rest of the broth and continue simmering. Stir in the arugula and toss everything together.
- Finish with a generous sprinkle of grated Parmesan cheese before serving.
