Ingredients

  • 8 oz sun-dried tomatoes
  • 1 lb artisan pasta
  • 1 cup extra virgin olive oil, divided
  • 1/3 cup red wine vinegar
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1 tbsp minced garlic
  • 1 cup Parmesan cheese, grated
  • 6 oz pitted black olives, sliced
  • 1/2 small red onion, thinly sliced
  • 3 cups fresh baby spinach leaves
  • 4 oz fresh basil leaves, chopped

Directions

  • Bring a large pot of water to a boil and season with salt. Cook the pasta according to the package instructions or until it’s al dente. Stir the pasta frequently throughout the cooking process, then strain and rinse under cold water for a moment.
  • Spread the pasta onto a baking sheet and drizzle with a tablespoon of olive oil. While the pasta cools, prepare the vinaigrette in a small mixing bowl by combining red wine vinegar, salt, pepper, and garlic. While whisking, drizzle olive oil in a slow stream to ensure the dressing is emulsified. Set aside.
  • Transfer the cooled pasta to a large mixing bowl and combine with the prepared dressing and remaining ingredients. Mix together and chill for at least an hour before serving.
