Ingredients
- 2 tsp extra virgin olive oil
- 1 tsp Italian seasoning
- 1 yellow onion, diced
- 2 garlic cloves, thinly sliced
- 1/2 cup sliced pepperoncini
- 12 oz roasted red peppers
- 2 boneless chicken breasts, sliced
- 1/2 cup all-purpose chicken broth
- 1/2 cup heavy cream
- 2 tbsp fresh parsley, chopped
- 1/4 cup fontina cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 tsp fine sea salt
- 1/2 tsp ground black pepper
Directions
- Heat olive oil in a large skillet over medium heat. Season the chicken with the Italian seasoning, salt, and pepper. Sear for 4-5 minutes on each side until the chicken is golden brown. Remove and set aside.
- In the same skillet, sauté the onion until it softens; then add the garlic. Stir in the pepperoncini, roasted red peppers, and chicken broth. Scrape up any browned bits from the skillet as the ingredients cook.
- Reduce the heat and stir in the fontina cheese, Parmesan cheese, and heavy cream. Return the cooked chicken to the skillet and simmer for 5 minutes until the sauce thickens. Garnish with fresh parsley and serve warm.
