Ingredients

  • 1 lb gnocchi pasta
  • 3 cups frozen peas, thawed
  • 6 oz basil pesto sauce
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • 2 tbsp extra virgin olive oil
  • 4 oz prosciutto cotto
  • 1/2 cup mozzarella pearls
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese
  • 4 oz fresh basil leaves, torn

Directions

  • Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside to cool.
  • In a food processor, blend the pesto, garlic, lemon juice, Parmesan, 2 cups of peas, and olive oil until the mixture becomes smooth and creamy.
  • In a skillet, heat olive oil and cook the prosciutto cotto for about 2-3 minutes until crispy. Transfer it to a paper towel-lined plate to cool.
  • In a large bowl, toss the cooked pasta with the pesto-pea sauce. Add the remaining peas and stir in the mozzarella pearls and prosciutto. Garnish with basil and sprinkle breadcrumbs on top just before serving. Serve chilled or at room temperature.
