Ingredients
- 14 oz artichokes, drained
- 2 tbsp extra virgin olive oil
- 1 tbsp Italian seasoning
- 2 tsp sea salt
- 1 tsp ground black pepper
- 1/2 cup mayonnaise
- 1 1/2 tsp lemon juice
- 1 tsp minced garlic
- 1 tbsp nonpareil capers, chopped
- 1 tbsp fresh parsley, chopped
- 1 lemon, zested
Directions
- Preheat your air fryer to 400°F. In a mixing bowl, combine the drained artichoke hearts, olive oil, Italian seasoning, sea salt, and ground black pepper. Toss well to coat the artichoke hearts evenly with the seasoning.
- Place the seasoned artichoke hearts in the air fryer basket in a single layer. Cook the artichoke hearts for about 12-15 minutes or until tender and slightly browned, shaking the basket halfway through the cooking time for even crisping.
- While the artichoke hearts are cooking, prepare the lemon aioli. In a small bowl, mix together the mayonnaise with fresh lemon juice, garlic, capers, parsley, and lemon zest. Stir until well combined and season with salt.
- Once the artichoke hearts are done cooking, remove them from the air fryer and let them cool for a few minutes. Serve the roasted artichoke hearts warm with the aioli on the side as a dipping sauce.
