Ingredients
- 2 tbsp garlic paste
- 1/2 tsp crushed red pepper
- 1 1/2 cup passata sauce
- 14 oz quartered artichoke hearts, drained
- 2 tbsp extra virgin olive oil
- 2 cups baby spinach
- 4 large eggs
- 1 ball burrata mozzarella
- 3 tsp fresh parsley, chopped
- 2 tsp fine sea salt
- 1 tsp ground black pepper
Directions
- Preheat your oven to 375°F. In an oven-safe skillet, heat olive oil over medium heat. Add the spinach and garlic paste and cook until the spinach is wilted, then remove from the pan and set aside.
- In the same skillet, pour in the passata and bring it to a gentle simmer. Carefully place the spinach back into the pan, then scatter artichokes evenly across the surface.
- Tear the burrata and distribute it evenly on top. Let it begin to melt slightly into the sauce. Crack the eggs into the skillet, spacing them out evenly around the pan. Season with salt, black pepper, and red pepper flakes.
- Transfer the skillet to the oven and bake for 15 minutes, or until the egg whites are set and the yolks remain slightly runny. Top with chopped parsley and serve hot with toasted bread or another side for dipping.
