Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 shallots, finely chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 14 oz all-purpose chicken broth
  • 1 lb chicken cutlets, diced
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 cups fresh spinach
  • 4 oz fresh parsley, chopped
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper

Directions

  • Add olive oil to a large skillet over medium heat. Season the diced chicken with salt and pepper and add it to the skillet, cooking until it becomes golden.
  • In the same skillet, add the finely chopped shallots and cook until softened. Stir in the chopped sun-dried tomatoes and cook for another few minutes.
  • Add orzo pasta to the skillet, toasting briefly. Pour in the chicken broth and bring to a simmer. Reduce heat to low, cover, and cook until the orzo is tender.
  • Stir in heavy cream, cooking until slightly thickened and heated through. Fold in fresh spinach leaves and allow them to wilt. Stir in cheese and mix well.
  • Garnish with fresh chopped parsley and serve hot.
