Ingredients
- 2 tbsp extra virgin olive oil
- 2 shallots, finely chopped
- 1/2 cup sun-dried tomatoes, chopped
- 14 oz all-purpose chicken broth
- 1 lb chicken cutlets, diced
- 1 cup orzo pasta
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 cups fresh spinach
- 4 oz fresh parsley, chopped
- 2 tsp fine sea salt
- 1 tsp ground black pepper
Directions
- Add olive oil to a large skillet over medium heat. Season the diced chicken with salt and pepper and add it to the skillet, cooking until it becomes golden.
- In the same skillet, add the finely chopped shallots and cook until softened. Stir in the chopped sun-dried tomatoes and cook for another few minutes.
- Add orzo pasta to the skillet, toasting briefly. Pour in the chicken broth and bring to a simmer. Reduce heat to low, cover, and cook until the orzo is tender.
- Stir in heavy cream, cooking until slightly thickened and heated through. Fold in fresh spinach leaves and allow them to wilt. Stir in cheese and mix well.
- Garnish with fresh chopped parsley and serve hot.
