Ingredients
- 1/4 tsp extra virgin olive oil
- 14 oz fire-roasted diced tomatoes
- 1 lb spaghetti pasta
- 1 tsp diced hot cherry pepper spread
- 14 oz San Marzano tomatoes, drained
- 7 oz whole shelled baby clams
- 1 tsp minced garlic
Directions
- Heat olive oil in a medium saucepan over medium heat. Sauté the garlic for two minutes until it becomes golden; be careful not to burn the garlic.
- Increase the heat to medium-high and add the tomatoes and cherry pepper spread to the pan. Cook for 10 minutes until the mixture has reduced slightly.
- Prepare the spaghetti pasta according to the package instructions. Add clams and two tablespoons of reserved clam liquid to the tomato sauce, and heat for one minute.
- Toss the drained pasta with the sauce, adding a few spoons of pasta water as needed, and combine well. Serve immediately.
