Ingredients

  • 6 tbsp butter
  • 1/3 cup flour
  • 3 cups whole milk
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 16 oz potato gnocchi
  • 2 tbsp jalapeño peppers, sliced
  • 4 oz sliced pimientos
  • 2 tsp Dijon mustard
  • 1/4 tsp ground black pepper
  • 1/4 tsp paprika
  • 3/4 cup Parmesan cheese
  • 2 tsp sea salt

Directions

  • Preheat your oven to 400°F. Cook the gnocchi according to the package instructions, then drain it and set aside.
  • In a large saucepan, melt butter over medium heat. Slowly sprinkle in the flour and whisk for 2 minutes. While whisking, slowly pour in the milk and continue to whisk until the liquid becomes thick. Remove the pan from the heat.
  • Stir in the cheddar and mozzarella cheese, adding handfuls at a time until it becomes melted and smooth. Add in the jalapeños, pimientos, mustard, pepper, salt, paprika, and half of the Parmesan cheese. Continue to stir the mixture.
  • Add the gnocchi to the pan and evenly coat with the sauce. Top with the remaining Parmesan cheese. Transfer the coated gnocchi to a baking dish and bake in the oven for about 10-12 minutes until the top is golden brown. Remove the pan from the oven and serve warm.
