Ingredients

  • 17 oz potato gnocchi
  • 1 tbsp extra virgin olive oil
  • 12 oz sautéed onions
  • 3 garlic cloves, minced
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed red pepper
  • 14 oz quartered artichoke hearts, drained
  • 1/2 cup Asiago cheese, grated
  • 1 cup mozzarella cheese, shredded
  • 2 cups fresh spinach
  • 1 tsp fresh oregano
  • 1 cup heavy cream
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper

Directions

  • Preheat your oven to 400°F. Cook the gnocchi in a large pot according to the package instructions, then drain and set aside.
  • In a cast iron skillet, heat olive oil over medium heat. Add the garlic and onions, and sauté for about 2-3 minutes until they soften.
  • Stir in the garlic powder, crushed red pepper, salt, pepper, and half the oregano, cooking for another minute until fragrant. Add the artichokes and spinach, and cook until the spinach is wilted. Pour in heavy cream and let it simmer for 2-3 minutes until slightly thickened.
  • Stir in the Asiago cheese and cooked gnocchi, tossing well until everything is coated. Top with mozzarella and bake for 10-15 minutes until bubbly and golden. Sprinkle with the rest of the oregano and serve warm.
