Mario’s Steak or Chicken Kabobs with Chimichurri are the most uncomplicated flavorful food to prepare for any summer celebration. Grill the steak or chicken and veggies with a bit of oil and salt and pepper and finish them off with plenty of awesome herby chimichurri sauce.

Ingredients
- 8 premade Beef or Chicken Kabobs, plain
- 1/3 cup olive oil
- 1/2 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 tsp dried oregano
- 1 1/2 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- 1 1/2 tsp minced garlic
- Salt and freshly ground black pepper
- Oil for brushing
- Optional: red pepper flakes or 1/2 of a seeded, minced red chile
Directions
- Preheat grill to approx. 400 degrees.
- While the grill preheats, brush ready-made steak or chicken kabobs very lightly with oil and salt. Optional: brush grill grates for less sticking.
- Grill the steak kabobs for about 4 minutes per side for about medium doneness. If cooking chicken kabobs, increase grill time by a few minutes until the center of chicken registers 165 degrees.
- Meanwhile, prepare chimichurri sauce by mixing olive oil, parsley, cilantro, oregano, garlic, red wine vinegar, lemon juice, and salt and pepper to taste. Optional: Add red pepper flakes to the chimichurri or 1/2 of a seeded, minced red chile if you like heat.
- Serve kabobs warm with plenty of chimichurri sauce.
