Ingredients
- 2 tbsp extra virgin olive oil
- 1 tsp Italian seasoning
- 1 tsp fine sea salt
- 4 boneless chicken breasts
- 12 oz roasted red peppers, drained
- 8 oz mozzarella cheese, sliced
- 3/4 cup fresh basil leaves
- 1/2 cup shredded mozzarella cheese
- 4 tbsp Italian balsamic glaze
Directions
- Preheat your oven to 375°F. Split the chicken breasts, creating pockets in the middle of the meat. Season the chicken breasts with Italian seasoning and salt.
- Lay 2 slices of mozzarella cheese, 2-3 roasted red pepper strips, and 2-3 fresh basil leaves inside each chicken breast. Coat a baking dish with olive oil and evenly place the stuffed chicken breasts.
- Sprinkle shredded mozzarella cheese on top of the chicken and bake for 25-30 minutes until the chicken is cooked and the cheese is golden brown. Plate and serve with a drizzle of balsamic.
