Ingredients
- 2 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 15 oz cannellini beans, drained
- 4 chicken cutlets
- 2 cups passata sauce
- 1/4 cup Parmesan cheese, grated
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme
- 2 cups kale
- 2 tsp sea salt
- 1 tsp black pepper
Directions
- In a large pan, heat olive oil over medium-high heat. Season the chicken with salt and pepper on both sides. Add the chicken to the pan and cook for 6-8 minutes until the skin is golden and crispy. Flip and cook for 4-5 more minutes.
- Add the onion and garlic to the pan and sauté for 2-3 minutes until they become soft and fragrant. Add in the passata sauce, beans, thyme, and rosemary. Cover the pan and simmer on low heat for 10 minutes, then cook uncovered for another 10 minutes to allow the sauce to thicken.
- Stir in the kale and cook for an additional 5 minutes, allowing the kale to wilt. Sprinkle Parmesan cheese over the dish and serve warm.
