Ingredients
- 2 eggs
- 3 large zucchinis
- 1 lb ground sausage
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 cup ricotta cheese
- 1/4 cup basil leaves, chopped
- 1/2 cup Parmesan cheese, grated
- 2 cups mozzarella cheese, shredded
- 1/2 cup manchego cheese, shredded
- 2 tbsp extra virgin olive oil
- 25 oz marinara pasta sauce
- 1/4 tsp Italian seasoning
- 1/4 tsp fine sea salt
- 1/4 tsp ground black pepper
Directions
- Preheat your oven to 375°F. Slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. Lay the strips on parchment paper and lightly sprinkle with salt. Let that sit for about 15 minutes to draw out excess moisture, then pat dry with another towel.
- In a large skillet, add extra virgin olive oil over medium heat. Add the onion and garlic and sauté. Add sausage to the skillet with salt, black pepper, and Italian seasoning. Allow the sausage to cook, then add the marinara sauce. Remove the skillet from the heat and set aside.
- In a medium bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, manchego cheese, eggs, and chopped basil. Take the zucchini strips and spread thin layers of the ricotta mixture over them.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Roll up the zucchini strips and place them seam-side down in the baking dish. Spoon the remaining marinara sauce on top and bake in the oven for 25 minutes.
