Ingredients

  • 3 tbsp extra-virgin olive oil
  • 6 garlic cloves, smashed
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh oregano, chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 lbs chicken wings
  • 1/2 tsp crushed red pepper flakes
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1/2 cup dry white wine
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup Parmigiano-Reggiano, grated

Directions

  • Preheat your oven to 425°F and line a large-rimmed baking sheet with foil for easy cleanup. Place a wire rack on top so the wings cook evenly and develop a crisp exterior. Pat the chicken wings completely dry with paper towels, then transfer them to a large bowl.
  • Drizzle the wings with the olive oil and add the garlic, rosemary, oregano, salt, black pepper, crushed red pepper flakes, and lemon zest. Toss thoroughly, making sure each wing is evenly coated with the oil and herbs so the flavors distribute well as they roast.
  • Arrange the seasoned wings in a single layer on the prepared rack, leaving a little space between each piece. Roast for 25 minutes, then flip the wings and continue cooking for another 20 minutes or until golden and crispy.
  • Carefully pour the white wine into the bottom of the pan, avoiding the wings, and return the pan to the oven for 5 minutes so the wine reduces slightly and adds flavor. Remove from the oven, finish with fresh lemon juice and chopped parsley, and serve hot with grated Parmigiano-Reggiano.
