Ingredients

  • 2 tbsp olive oil
  • 24 oz marinara sauce
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1 cup polenta
  • 4 cups chicken broth
  • 2 tbsp butter
  • 16-20 beef meatballs
  • 1/2 cup grated Parmesan cheese
  • 2 tsp fine sea salt
  • 2 oz fresh basil

Directions

  • Heat olive oil in a large skillet over medium heat. Add the meatballs to the skillet and cook for about 6-8 minutes, turning occasionally, so they brown evenly on all sides. Pour the marinara sauce into the skillet and gently stir to coat them in the sauce. Add the oregano and red pepper flakes and stir to combine.
  • Reduce the heat to medium-low, cover the skillet, and allow the meatballs to simmer for 10-15 minutes, stirring occasionally. While the meatballs are simmering, bring the chicken broth to a boil in a medium saucepan. Slowly whisk in the polenta to prevent lumps from forming. Reduce the heat to low and cook for 15-20 minutes, stirring frequently until the polenta becomes thick and creamy.
  • Once the polenta is fully cooked, stir in the butter and grated Parmesan cheese until melted and fully incorporated. If the polenta becomes too thick, stir in a small splash of warm chicken broth to loosen it.
  • Spoon the polenta into bowls and spread it slightly to create a base. Top with several meatballs and additional marinara sauce. Finish with extra grated Parmesan and fresh basil if desired.
