Whole grain pasta coated in a quick and easy anchovy sauce made with butter, garlic, olive oil, and parsley.

Ingredients
- 1 lb Organic Whole Wheat Penne Rigate
- 3 tbsp Butter
- 1/2 cup Antonio Imported Extra Virgin Olive Oil, plus 1 tbsp
- 1 1/2 tbsp Minced Garlic
- 1/4 tsp Crushed Red Pepper
- 1/4 cup Fresh Italian Parsley, chopped
- 2 tbsp Anchovy Paste in a Tube
- Fine Sicilian Sea Salt, to taste
- Ground Black Pepper, to taste
Directions
Tip: To make the pasta even more tasteful, try infusing garlic and herbs into the Extra Virgin Olive Oil.
- Cook pasta according to package instructions, reserving ¼ cup of pasta water for later.
- While pasta cooks, add butter and one tablespoon of oil to a pan over medium heat.
- Once butter melts, add garlic, red pepper, and 1 tablespoon parsley.
- Sauté for 1-2 minutes, then add anchovy paste and stir until dissolved.
- Add ½ cup of oil, salt, and pepper and cook for about a minute until all flavors are infused.
- Mix drained pasta, remaining parsley and reserved pasta water to the pan and cook for about a minute.
