Whole grain pasta coated in a quick and easy anchovy sauce made with butter, garlic, olive oil, and parsley.

Ingredients

  • 1 lb Organic Whole Wheat Penne Rigate
  • 3 tbsp Butter
  • 1/2 cup Antonio Imported Extra Virgin Olive Oil, plus 1 tbsp
  • 1 1/2 tbsp Minced Garlic
  • 1/4 tsp Crushed Red Pepper 
  • 1/4 cup Fresh Italian Parsley, chopped
  • 2 tbsp Anchovy Paste in a Tube 
  • Fine Sicilian Sea Salt, to taste
  • Ground Black Pepper, to taste 

Directions

Tip: To make the pasta even more tasteful, try infusing garlic and herbs into the Extra Virgin Olive Oil.

  • Cook pasta according to package instructions, reserving ¼ cup of pasta water for later.
  • While pasta cooks, add butter and one tablespoon of oil to a pan over medium heat.
  • Once butter melts, add garlic, red pepper, and 1 tablespoon parsley.
  • Sauté for 1-2 minutes, then add anchovy paste and stir until dissolved.
  • Add ½ cup of oil, salt, and pepper and cook for about a minute until all flavors are infused.
  • Mix drained pasta, remaining parsley and reserved pasta water to the pan and cook for about a minute.
