Ingredients

  • 2 tbsp extra virgin olive oil
  • 4 garlic cloves, sliced
  • 14 oz fire-roasted diced tomatoes
  • 1/2 cup parmesan cheese, grated
  • 1/4 tsp crushed red pepper
  • 1 tsp Italian seasoning
  • 1 tsp fine sea salt
  • 1 tsp ground black pepper
  • 15 oz cannellini beans, drained
  • 2 cups baby spinach
  • 1/4 cup fresh basil leaves, chopped
  • 2 cups mozzarella cheese, grated

Directions

  • Preheat your oven to 375°F. In a large cast-iron skillet, add olive oil over medium heat and sauté 3 thinly sliced cloves of garlic until fragrant, about 1-2 minutes.
  • Add a can of fire-roasted tomatoes to the skillet and season with salt, pepper, and crushed red pepper. Simmer for 5 minutes.
  • Add the baby spinach and simmer until the spinach begins to wilt. Add the beans and basil to the mixture, then top with mozzarella and parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden brown. Allow it to cool for a few minutes, then serve directly from the skillet with your choice of dipping accompaniments.
