- 1 pkg potato gnocchi (17.6 oz)
 - 1 oz pignoli nuts
 - 6 tbsp basil pesto sauce
 - 3 cups baby spinach
 - 2 tbsp imported extra virgin olive oil
 - 3/4 cup heavy cream
 - Salt and pepper to taste
 
Directions
- Cook gnocchi according to the packaging. Drain and set aside.
 - Heat olive oil in a large saucepan and toast pine nuts until golden brown, about 3 minutes.
 - Add pesto, heavy cream, salt, and pepper, and mix, whisking until smooth, for 2-3 minutes.
 - Add gnocchi and spinach and mix until the sauce coats the gnocchi evenly and spinach is wilted for about 3 minutes.
