Ingredients

  • 1 pkg potato gnocchi (17.6 oz)
  • 1 oz pignoli nuts
  • 6 tbsp basil pesto sauce
  • 3 cups baby spinach
  • 2 tbsp imported extra virgin olive oil
  • 3/4 cup heavy cream
  • Salt and pepper to taste

Directions

  • Cook gnocchi according to the packaging. Drain and set aside.
  • Heat olive oil in a large saucepan and toast pine nuts until golden brown, about 3 minutes.
  • Add pesto, heavy cream, salt, and pepper, and mix, whisking until smooth, for 2-3 minutes.
  • Add gnocchi and spinach and mix until the sauce coats the gnocchi evenly and spinach is wilted for about 3 minutes.
  • Finally, it’s time to enjoy!
