Ingredients

  • 4 boneless pork chops
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning

Directions

  • Season both sides of the pork chops with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear pork chops for 3-4 minutes per side until golden brown. Remove and set aside.
  • Add garlic to the skillet and cook for 30 seconds.
  • Pour in chicken broth and scrape up any browned bits from the pan.
  • Stir in heavy cream, Parmesan cheese, and Italian seasoning.
  • Add spinach and cook until wilted.
  • Return pork chops to the skillet and simmer for 8-10 minutes, or until the pork reaches 145°F.
  • Serve immediately with the cream sauce spooned over the top.
