Ingredients
- 3 lbs Country Style Bone-In Pork Ribs (on sale this week!)
- 1/4 cup extra virgin olive oil
- 5 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh oregano, chopped
- Juice of 1 lemon
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp crushed red pepper flakes (optional)
Directions
- In a bowl, combine the olive oil, garlic, rosemary, parsley, oregano, lemon juice, salt, pepper, and red pepper flakes.
- Place the ribs in a large resealable bag or container and pour the marinade over them.
- Refrigerate for at least 4 hours or overnight.
- Preheat the grill to medium heat (about 350°F).
- Place the ribs over indirect heat, cover, and cook for 20 to 25 minutes, turning occasionally.
- Move the ribs over direct heat and grill 3 to 4 minutes per side until nicely charred and the internal temperature reaches 145°F.
- Transfer to a platter and let rest for 5 minutes.
- Garnish with fresh parsley and serve.
