Ingredients

  • 1 lb pasta shells
  • 1 tbsp extra virgin olive oil
  • 1 onion, finely chopped
  • 14 oz diced tomatoes
  • 2 tbsp concentrated tomato paste
  • 1/2 cup beef stock
  • 1 tsp garlic paste
  • 1 tsp Italian seasoning
  • 1 cup baby spinach, chopped
  • 1 lb ground round
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup heavy cream
  • 1/4 tsp crushed red pepper
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 4 oz fresh basil leaves

Directions

  • Cook the pasta in a large pot of salted boiling water until al dente, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Cook the ground round until it is fully browned, then transfer it to a bowl and set aside. In the same skillet, sauté the onion for 3-4 minutes until it becomes soft.
  • Stir in the garlic paste, tomato paste, diced tomatoes, beef broth, red pepper flakes, Italian seasoning, salt, and pepper. Bring the mixture to a simmer, then return the cooked beef to the pan. Add the spinach and cook until wilted.
  • Turn off the heat and stir in the heavy cream until the sauce is well combined. Add the cooked pasta to the skillet and mix thoroughly until the shells are fully coated in sauce.
  • Top with grated Parmesan cheese and garnish with fresh basil before serving.
