Mozzarella Chicken Fritters
Mozzarella Chicken Fritters (16 to 18 Fritters)
- 1 1/2 lbs. chicken cutlets
- 2 tbsp. olive oil
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour
- 1 1/3 mozzarella cheese, shredded
- 1 1/2 tbsp. fresh dill, chopped
- Sea salt, to taste
- Fresh ground black pepper, to taste
Using a sharp knife, dice the chicken cutlets into small pieces and set them aside.
In a medium-sized bowl, combine the 2 eggs, mayonnaise, all-purpose flour, shredded mozzarella cheese, chopped dill, sea salt, and fresh ground black pepper.
Mix the ingredients until they are well combined.
Stir in diced chicken and cover the bowl with plastic wrap.
Place the bowl in the refrigerator and allow the chicken to marinate for at least 2 hours.
Heat a large pan over medium-high heat and then add the olive oil.
Add the chicken mixture a heaping tbsp. at a time.
Slightly flatten the chicken fritters with the back of the spoon or a spatula.
Sauté the fritters uncovered for 3 to 4 minutes on the first side.
Flip the fritters and continue sautéing uncovered for 3 more minutes or until the chicken fritters are a golden brown and fully cooked.
Remove the fritters from the pan to a paper towel lined dish.
Let the fritters cool before serving with your favorite dipping sauce or as sliders.
