Ingredients
- 4 bone-in pork chops
- 2 tbsp olive oil
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- ¼ tsp red pepper flakes
- Salt and black pepper to taste
- 8 oz provolone cheese, sliced
- Fresh basil or parsley for garnish
Directions
- Season pork chops with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear pork chops for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, cook onion until softened. Add garlic and sauté for 30 seconds.
- Stir in tomatoes, oregano, basil, and red pepper flakes. Simmer for 10 minutes.
- Return pork chops to the sauce and cover. Cook for 20-25 minutes, until the pork is tender.
- Top each chop with provolone cheese and cover for 2-3 minutes until melted.
- Garnish with fresh basil and serve with crusty Italian bread or pasta.
