Portabella mushrooms seasoned and baked between layers of hearty marinara sauce and cheese.

INGREDIENTS (Serves 4-6)
- ¼ cup Parmesan Cheese, grated
- 4 tbsp Extra Virgin Olive Oil
- 6 Portabella Mushrooms Caps, washed and patted dry1 cup Water
- ½ tsp Fine Sicilian Sea Salt
- ¼ tsp Ground Black Pepper
- 1 cup Marinara Sauce
- ½ cup Mozzarella Cheese, shredded
- ¼ cup Parmesan Cheese, grated
DIRECTIONS
Preheat oven to 400F
In a large frying pan, heat 1 tablespoon of oil over medium-high flame.
Brush remaining oil over both sides of mushrooms, season with salt and pepper.
Remove from heat, add an egg, and beat well, until well incorporated, before adding the next egg. Repeat with remaining eggs, until the batter is smooth and satiny.
Place mushrooms in a pan and allow to cook until heated throughout, about 3-5 minutes on each side.
Spread ½ cup of marinara sauce on bottom of baking dish and mushrooms on top of sauce.
Evenly spread remaining sauce on mushrooms and sprinkle with cheeses.
Bake for 15 minutes, or until cheese begins to brown.
Remove from oven and let stand 2-3 minutes before serving.
