Ingredients
- 1 cup dry red wine
- ½ cup cut sun-dried tomatoes, drained
- ¼ cup fresh basil leaves
- 4 cloves garlic, peeled and crushed
- 1 tsp sea salt
- ¼ tsp crushed red pepper
- ½ cup extra virgin olive oil
- 3 lb top sirloin steak
Directions
- In a food processor, combine wine, sun-dried tomatoes, basil, garlic, salt, and crushed red pepper. Pulse until chunky paste forms, then scrape down the sides of the bowl.
- With the machine running, pour olive oil in a steady stream. Put the steak in a resealable bag and pour in the marinade. Marinate in the fridge for one hour.
- Preheat oven to 425°F. Remove steak from marinade and place in a roasting pan. Roast until medium rare, about 20 minutes.
- Remove the steak and place it on a cutting board, letting the meat rest for 5-10 minutes. Thinly slice and serve.
