Ingredients

  • 1 lb orecchiette pasta
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, sliced
  • 1 1/2 cup passata sauce
  • 2 tbsp concentrated tomato paste
  • 2 tbsp nonpareil capers, drained
  • 1/2 cup ricotta salata
  • 1/2 tsp crushed red pepper flakes
  • 2 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1/4 cup basil leaves, chopped

Directions

  • Cook the pasta according to the package instructions until al dente. Set aside.
  • Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute, until fragrant. Stir in tomato paste, red pepper flakes, salt, and black pepper, and cook for another minute.
  • Add the passata sauce to the skillet and let it simmer for 5-7 minutes, stirring occasionally. Add the cooked pasta and capers to the skillet, tossing to coat everything in the sauce.
  • Transfer the mixture to serving bowls and top with a dollop of ricotta salata, basil, and additional red pepper flakes if desired.
