Ingredients
- 1 lb orecchiette pasta
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, sliced
- 1 1/2 cup passata sauce
- 2 tbsp concentrated tomato paste
- 2 tbsp nonpareil capers, drained
- 1/2 cup ricotta salata
- 1/2 tsp crushed red pepper flakes
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 1/4 cup basil leaves, chopped
Directions
- Cook the pasta according to the package instructions until al dente. Set aside.
- Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute, until fragrant. Stir in tomato paste, red pepper flakes, salt, and black pepper, and cook for another minute.
- Add the passata sauce to the skillet and let it simmer for 5-7 minutes, stirring occasionally. Add the cooked pasta and capers to the skillet, tossing to coat everything in the sauce.
- Transfer the mixture to serving bowls and top with a dollop of ricotta salata, basil, and additional red pepper flakes if desired.
