Easy Broccoli Cheddar Soup

Easy Broccoli Cheddar Soup (8 Servings)

  • 2 cups sharp cheddar cheese
  • 1 lb. broccoli florets, cut into small pieces
  • 2 large carrots, peeled and grated
  • 3 cups milk or half and half
  • 2 cups chicken stock
  • 1/3 cup butter
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1 tsp. vegetable stock powder
  • 1 tsp.mustard powder
  • 1 tsp.garlic powder
  • 2 large carrots, peeled and grated
  • Sea salt, to taste
  • Fresh ground black pepper, to taste

Directions

  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion and fry it until it becomes fragrant; around 2 minutes.
  • Add the garlic and continue to cook for another minute or so.
  • Whisk in the flour and cook until it is a golden brown, around 3 to 4 minutes.
  • Reduce the heat to medium-low and slowly pour in the chicken stock and half-and-half, continuously stirring until it is well combined, and the flour is dissolved into the liquid.
  • Season the mixture with salt, pepper, stock powder, mustard powder, and garlic powder.
  • Give it a good mix and allow to cook and thicken for about 5 minutes, while stirring occasionally.
  • Add in the broccoli and carrots and let it gently simmer for another 20 minutes, or until the broccoli is completely tender.
  • Mix in the sharp cheddar cheese and stir until it is just combined.
  • Taste test the soup and add in extra salt and pepper if needed.
  • Let the soup cool off a bit before serving.
